Discover PLUME's rendition of "The White Lady," a classic cocktail originated by renowned bartender Harry MacElhone in 1919. In this variation, classic orange liqueur is replaced with violette liqueur to complement the floral undertones of ROKU Sakura Bloom.

Infused with the delicate scent of Osmanthus and a splash of freshly squeezed lemon juice for a tangy kick, this mixture simply delights. The addition of velvety egg white envelops the palate in its smooth texture and rich array of flavors.

Head Bartender, Ong Jun Han

Avian-themed bar, PLUME, is the latest place in town for delectable cocktails. And at the head of this head-turning bar is one award-winning bartender, head mixologist Ong Jun Han. The 2019 Campari Bartender Champion represented Singapore in Milan where he emerged in the top 14.

As the creative force behind PLUME's cocktail menu, Jun Han (pictured centre) consistently pushes the boundaries of what a cocktail can be, offering a unique and memorable experience for each guest.

Lady in "Osaka"

Featuring PLUME's take on "The White Lady" cocktail invented by famed bartender Harry MacElhone in 1919. Here, the recipe swaps the usual orange liqueur for violette liqueur to better pair ROKU Sakura Bloom's floral notes. Infused with the subtle fragrance of Osmanthus and a squeeze of fresh lemon juice for a citrusy tang. Velvety egg white lends a silky texture that wraps around the palate.

Saku-mai

In the early 2000s, mixologists pushed the limits of tradition by adding Sake into their cocktail creations. PLUME's version layers ROKU Sakura Bloom with savoury umami, adding rice vermouth for its subtle, yet distinct earthy complexity. Shoyu orange tincture lends a touch of richness, balanced perfectly with the bright zest of citrus.

Ohanami

ROKU Gin layers this concoction with botanical complexity while Absinthe adds a touch of mystique, evoking the essence of cherry blossoms in the moonlight. Amaro Montenegro contributes a subtle herbal undertone, enhanced with the sweet indulgence of Amarena cherry and a squeeze of fresh lemon. The result? A refreshingly tart and sweet cocktail.
