In homage to Japan's quintessential symbol of spring, Pahit has chosen to accentuate the delicate floral notes of ROKU Sakura Bloom with the addition of sakura blossom syrup. Bright, lively, and gently bittersweet, a good pour of the aromatised wine aperitivo, Cocchi Rosa, creates a sense of complexity.

Smooth and elegant dry sake dresses up this concoction named "Sakura" for its smooth and balanced flavour profile. A mild hint of warmth arises from a velvety egg white finish, providing a comforting sensation that's beautifully offset by the brightness of lemon.

Bartender, Lean Ming Shen

With over a decade of experience crafting behind the bar, bartender Lean Ming Shen brings a wealth of expertise and passion to the craft of mixology. Dating back to 2011, Shen has acquired invaluable experience from a variety of esteemed establishments, ranging from intimate speakeasies to the current specialist role.

At Pahit, a long list of impressive gins take centrestage, complemented by warm hospitality and convivial bartenders. With Shen at the helm, patrons are treated to an unforgettable experience, whether they're indulging in delicious bar grub or sipping on expertly crafted gin cocktails.

Sakura

In the early 2000s, mixologists pushed the limits of tradition by adding sake into their cocktail creations. Pahit's version layers ROKU Sakura Bloom with savoury umami, adding dry sake for its subtle, yet distinct earthy complexity. A mix of fruity Cocchi Rosa and cherry blossom syrup lends a touch of richness, balanced perfectly with the bright zest of fresh lemon.

Ume

The delicate floral notes of ROKU Sakura Bloom harmonise with the sweet warmth of vanilla syrup and the citrusy brightness of Italicus Rosolio di Bergamotto. Lime juice adds a zesty kick while umeshu infuses a subtle fruity undertone. Finished with a dash of The Japanese Bitters sakura bitters, this cocktail offers a complex taste experience that exudes Japanese springtime.

Strawberry

Crisp ROKU Gin meets the tart sweetness of slow-infused strawberry in this refreshing concoction. Delicate Lillet Rose adds its floral complexity to ROKU's herbaceous profile, while Gajàrdo Triple Sec Radicale, the ancestor of limoncello, lends a bittersweet aftertaste that lingers. Topped with jasmine soda for a breezy cocktail for the tropical heat.
