Head Bartender, Kamarúl Nizam, draws inspiration from the vibrant coastal scenes of his hometown, Sabah's Semporna, to craft a delicious cocktail that embodies the essence of the local fisherman's life, the tranquil beaches, and the salty sea breeze.

In crafting "Sea of Colour", Nizam slow-infused pandan to preserve its aromatic, vanilla-like notes without overpowering ROKU's floral profile. Without relying solely on the usual bitters, the cocktail turns to Bigallet China-China, made from a blend of sweet and bitter orange peels, for added complexity. The result? A sakura cocktail anyone can enjoy, with a flavourful citrus air that dissolves on the tongue as you start to drink.

Mixologist, Kamarúl Nizam

Nizam, a valued member of the cocktail curation team at Frank's Bar, hails from the scenic region of Sabah. With a rich background in the food and beverage industry, the Giffard West Cup Malaysia 2022 finalist brings to the table a blend of leadership, creativity, and an unwavering passion for mixology.

In tune with the Sinatra music ever-present at Frank's Bar, Nizam holds a special fondness for the song "My Way." And should the occasion arise, he might just be persuaded to serenade you with his rendition.

Sea of Colour

A concoction that intertwines the essence of pandan-infused ROKU Sakura Bloom with the complex orangey bitterness of Bigallet China-China. Whey adds body and texture, resulting in a richer, smoother cocktail, while rosemary-infused wine elevates the overall profile with its herbal notes. The pièce de résistance? A cloud of orange air that tops the cocktail and melts on the tongue.

Tiki Nanami

Thought to be the oldest cherry liqueur in the world, Cherry Heering adds stewed plum and cherry jam flavours to a refreshingly balanced base of sakura gin and luscious passionfruit. Martini Rosso Vermouth contributes rich honey and floral notes while pineapple juice adds a tropical twist, creating the perfect balance of tart and sweet.

The Martinez

The cocktail world owes much to the classic Martinez. Comprising equal parts gin and sweet vermouth, along with maraschino liqueur and bitters, this old-fashioned twist on the Manhattan is credited with influencing the Martini as we know it now. Here, ROKU forms the backbone, its complex array of floral and herbal notes rounding out the cocktail for a satisfying sip.
