The ume (Japanese plum) blossoms in the cold of winter, symbolising resilience, and signalling the arrival of spring and cherry blossoms. "UME-tini" explores the seasonal transition of both blooms in a single drink, reflecting a profound appreciation for nature's transitions.

A notable feature of the UME-tini is its garnish: Goma abura mixed with edible red sparkling powder, resembling the crimson red circle at the centre of Japan's flag. This garnish not only adds visual appeal; it acts as a palate cleanser, gently wrapping up each sip and enhancing the overall tasting experience.

UME-tini

ROKU Sakura Bloom lays the foundation with its refined flavour profile, its floral notes mingling with crisp Dolin dry vermouth. But it's the unexpected twist of salted plum that truly sets this cocktail apart with its tantalising hint of sweetness. Sansho peppercorn provides a subtle kick, while fresh lemon juice lends a bright, citrusy finish.

MIDOR-ini

This distinctive green-ringed cocktail boasts a nuanced flavour profile. ROKU Sakura Bloom infused with celery contributes herbal notes, accentuating the gin's botanical essence. Dolin dry vermouth adds a dry and slightly bitter undertone to a tart green apple extract, while Bitter Truth Celery Bitters imparts a rich bouquet of white grapes.

UMAM-ini

Drops of truffle oil sit slickly on the surface of this concoction - prompting a closer look and an aromatic reward. Truffle-infused ROKU Gin lends a subtle earthiness and depth to a drink that's definitely for the sophisticated gin connoisseur. Cocchi Americano's quinine-flavoured sweetness brings complexity, balancing the savoury notes of the truffle.
