While browsing the aisles of Don Don Donki in Japan, the idea for this cocktail took root, blending the essence of spring with the convenience of everyday ingredients.

Crafted with ROKU Sakura Bloom as its spirited base, this cocktail celebrates the delicate floral notes of the season. Sakura's floral bouquet is complemented by elderflower's subtle sweetness. To infuse the cocktail with citrus and fruity vibrancy, yuzu is added, lending its bright zest to the mix.

A simple yet effective technique of 'rim dusting' with sencha powder adds a final flourish, enhancing the nose and aftertaste without overpowering the cocktail's complex profile.

Head Bartender and Co-Founder, Jason Wong

Jason Wong didn't start his career behind the bar. In fact, he began his journey in hospitality as cabin crew with Singapore Airlines, where he developed a profound appreciation for service. Traveling the world, he was inspired by the diverse cocktail cultures he encountered, sparking a keen interest in mixology.

Grounded by the pandemic, Jason swapped the cabin for the bar, immersing himself in Singapore's vibrant cocktail scene. As a pastry and barista graduate, Jason infuses his creations with pastry-inspired flavours, delighting guests with his unique craftsmanship and unwavering hospitality.

Sakuma Drops

ROKU Sakura Bloom's floral notes mirror elderflower's subtle sweetness in this cocktail base. Citric solution is introduced, and a touch of saline enhances the overall mouthfeel, ensuring each sip is smooth and satisfying. Finally, the glass is rimmed with sencha powder, bringing a touch of light tannin and balancing out sweetness with a gentle astringency.

Hanami

A cocktail that beckons with the bright allure of lemon and the delicate charm of ROKU Sakura Bloom. Fresh pear adds sweet juiciness, while lemon puree infuses a zesty citrus tang. The cocktail is infused with jasmine flower's sweet, musky, and sultry aroma while achieving a rich mouthfeel with the addition of velvety egg white. Refreshingly zesty!

Nigaita

Chamomile-infused wintermelon tea adds a subtle floral aroma and a hint of earthy sweetness to ROKU Gin's botanical profile. Luxardo Bitter Bianco's rosemary-led herbal complexity lends a refined bitterness and a dash of orange blossom water imparts fragrant, citrusy notes. The sour plum stick, reminiscent of traditional Asian flavoirs, adds tanginess and a touch of umami complexity.
