Embracing the essence of seasonal Malaysian fruits, "Guava" reflects ROKU's ethos of "shun" - the tradition of enjoying food and drink in their season, and only when ingredients are at the peak of their flavours.

Leveraging a rotary evaporator creates a flavour-focused cocktail via vacuum distillation. Guava's fruity essence is extracted while preserving ROKU Sakura Bloom's delicate floral notes, ensuring a sensory journey. Beyond technique, Here & Now's sakura menu focuses on fruits, allowing guests to discover the vibrant flavours of local Malaysian produce in each sip.

Director and Co-Founder, Affie Adut

You'll often spot Affie Adut serving up fantastic concoctions behind his own bar. Winner of Bacardi Legacy Malaysia 2018, he clinched first runner-up in the Southeast Asia Bacardi Legacy contest and triumphed in the Amaro Di Angostura Versus competition the same year.

At Here & Now, Adut has crafted a menu themed around time, with past classics, present twists, and future innovations.

Guava

Crafted with precision, this cocktail blends the delicate essence of sakura gin with the extracted clarity of clarified pink guava, offering tropical sweetness. Enhanced by the herbal notes of a housemade basil cordial and a touch of saline for balance, the cocktail's profile is then rounded off with a refreshing burst of citrus.

Kedondong

The kedondong is a tropical fruit native to the equatorial climate of Malaysia. As the fruit matures, it gradually transforms to a golden yellow, offering a delightfully floral aroma and a taste similar to pineapple. Paired with ROKU Sakura Bloom, pickled kendondong sets the stage for a delicately floral cocktail with smooth citrus notes from Shochu, calamansi distillate, and citric.

Papaya

Inspired by ROKU's "shun" philosophy, here's a drink to toast luscious Malaysian fruits in season. Indulge in its tropical allure, a tantalising blend of fresh papaya juice and honey infused with the citrusy zing of yuzu. Aromatic kaffir adds a subtle herbal note, while a touch of mezcal brings depth and smokiness. Finished with a splash of citrus and soda.
