A gin menu without a riff on a Negroni? Impossible, said the bartenders at Desire Speakeasy. The "Snowgroni," inspired by the renowned White Negroni, embodies Japan's seasonal shift from the end of winter to the beginning of spring.

To create the Snowgroni, two housemade ingredients are prepared: a rose syrup made from water, sugar, rose petals, and rose water for heightened aroma; an orange-Campari foam with fresh orange juice, Campari, lemon, and egg white, charged twice in an iSi whipper for a velvety finish.

Bartender, Ram Prasad

Ram Prasad, a bartender with two years of experience under his belt, is on a quest for knowledge. Hungry to learn and grow, he's dedicated to honing his craft and expanding his skills in the art of mixology. Through this collaboration, he hopes his cherry blossom cocktails serve as a poignant reminder of life's fleeting nature, urging guests to embrace every moment.

Snowgroni

Here's an equinox variation on the renowned White Negroni. The combination of floral botanicals and saltiness in ROKU elevate the citrus element introduced by Lillet Blanc, while an orange-Campari foam brings brightness and a textured layer of acidity to the nose and palate. Rose syrup adds a hint of aromatic sweetness and the resulting blend is mellowed by the foam layered on top.

The Drupe Sour

Here's an alluring cocktail that tastes just as good as it looks. Built off a foundation of ROKU Sakura Bloom, this tropical masterpiece with a Japanese twist mingles sakura notes with the sweetness of mango cordial and the creamy richness of coconut liqueur. A splash of zesty lemon juice adds a refreshing tang, while velvety egg white creates a luxurious texture.

Mo's Highball

Crafted with the delicate florals of ROKU Sakura Bloom, this highball perfectly captures the essence of springtime. Refreshing cucumber mint shrub adds a crisp, cooling note, complemented by a dash of aromatic Angostura bitters. Topped with soda water for effervescence, it's a harmonious blend of floral, herbal, and citrus flavours—a perfect sip of the season.
