In this seasonal collaboration with ROKU Sakura Bloom, we find three cherry blossom cocktails made for spring sipping.

In "THE FLOWER", ROKU's floral notes are paired with geranium and jasmine, lending the cocktail a distinctive floral bouquet. In contrast, ROKU's citrus notes are paired with gyokuro and guava in "THE GREEN", giving it a verdant and fruity profile.

"THE SUN" stands out as the most unique offering. Palo santo and orange milk punch create multiple layers of flavour, bringing out texture, and nutty citrus nuances. The garnish for "The Sun" is especially noteworthy: an egg yolk cured and dried for 12 hours, shaped to resemble the sun.

Head Bartender and Co-Founder, Vinc Pow

Launched in November 2022, Shui 水 (meaning water in Mandarin), embodies Vinc's love for cocktails that are as clear as water, yet rich in flavour. Behind the bar, a variety of distillates are used to create layered concoctions.

Vinc's bartending journey ignited a few years ago when he had a crystal-clear, well-balanced drink that amazed him. This experience led him to crafting an expertise in clarification techniques, allowing him to serve drinks both visually stunning and deliciously intricate. His background in interior design is evident in the bar's sleek and minimalist aesthetic - making the haunt a favourite for local conversationalists.

The Flower

ROKU's delicate floral notes are central to this concoction, accentuated by the aromatic complexity of geranium distillate with its slightly spicy and minty undertones. Added acidity from a sour and the effervescence of peach & jasmine soda balance the gin, providing a refreshing counterpoint to the cocktail's sweetness. An ulam raja flower adds an exotic touch, both in appearance and taste.

The Green

Crafting a cocktail with ROKU Sakura Bloom and the rich and earthy elegance of gyokuro results in a sophisticated and layered combination of floral, herbal, and fruity notes. Clarifying guava juice refines its texture resulting in a smooth addition. The natural sweetness and slight tartness of guava balance the floral and herbal, adding a vibrant dimension to the drink.

The Sun

Here's a drink that's a testament to the art of balancing bold flavours. Known for its intense smoky flavour derived from drying tea leaves over pinewood fires, lapsang souchong brings its unmissable rich depth to this daring concoction. The cocktail's mouthfeel is exceptionally smooth and luxurious, thanks to the creamy texture of an orange milk punch, while a cured egg yolk garnish adds a rich, velvety finish.
