Penrose's bartender, Lai, has always had a strong affinity for the Martini, and its spinoff, the Gibson. In his rendition, Lai skillfuly delves into blending the sweet vegetal tones of gyokuro tea with pickled sakura petals. A delightful variation of the Gibson emerges, boasting enhanced floral and herbaceous nuances.

This cocktail adheres to a minimalist philosophy, relying instead on the bartender's technical expertise. Aptly named "Fubuki," meaning snowstorm or blizzard, this concoction is served at an exceptionally low temperature, ensuring a refreshing experience.

Bartender, Yong Shern Lai

With over 13 years of industry experience, Bartender Lai embarked on a journey from the culinary world to coffee, eventually finding a calling in bartending. His initial foray into mixology started in Singapore, where he honed his craft before returning to Malaysia with a steadfast resolve to elevate the local cocktail culture. The inception of Penrose in Kuala Lumpur marked the culmination of this aspiration.

While he refrains from labelling it a passion, Lai feels a commitment to share the insights gained from global ventures with his homeland.

Fubuki Martini

There are countless ways to tweak the classic Martini, but one of its best spin-offs is the Gibson. In this version, the subtle complexity of ROKU Gin coupled with bianco-infused sakura, is elevated by a touch of dry vermouth-infused gyokuro for a unique twist. Pickled sakura tincture takes the place of the Gibson's usual savoury onion garnish, adding its umami undertone to the entire cocktail.

Murasaki

Crafted with precision, this cocktail combines the delicate floral notes of ROKU Sakura Bloom with the vibrant hues and earthy sweetness of purple cabbage. The tartness of grapefruit juice complements the gin's floral botanicals, while a hint of sugar syrup balances any acidity. Fresh lemon juice brings brightness, enhanced by the subtle complexity of fennel bitters.

Tangotini

Served chilled, this pretty cocktail captivates with its ombre effect, transitioning gracefully from a creamy hue to a deep red. The floral elegance of ROKU Sakura Bloom is married with the lush sweetness of mangosteen cordial. Grapefruit juice adds a tangy zest, while orange bitters impart subtle depth and complexity. The result is a refreshing and visually stunning drink.
